The Cold Brew Process for Preparing Nitro Coffee
Step #1: Preparing Organic Coffee
The first step involves preparing your organic coffee. This involves grinding the coffee beans. The size that will work the best is medium size. You can use a food processor in this step. After preparing this coffee, you will need to measure it and put it in muslin bags. Muslin bags will allow the coffee to seep out into the water when you finally place the coffee in water.
Step #2: Adding Coffee to Water
The coffee that has already been placed in muslin bags is placed in a cold-brew coffee brewing container. Make sure that the container is clean and sterile before placing your coffee in it. The container should have a lid.
Water is then added to this container. The recommended ratio is usually a gallon of water for every pound of ground coffee beans. You can shake your container or stir it in order to increase the rate at which the coffee seeps out into the water. After doing this, you should cover the container and leave the coffee alone for at least 24 hours.
Step #3: Filter Your Coffee
You can use a filter paper to eliminate any coffee fines in the cold brew. This eliminates clogging in your hoses which can limit the efficiency of your dispensing system. The process of removing these fines usually takes time and hence you have to be patient.
Step #4: The Hot Step
In the traditional cold-brewed nitro coffee making process, the coffee is infused with nitrogen immediately after it has been strained. However, introducing a hot step enhances the safety of the coffee. In this step, the coffee is heated to above pasteurization temperature. This helps sterilize the coffee. This step does not have any negative effect on the coffee flavor. The major aim of this step is to enhance the stability and make it safer.

You can use either a nitrogenator which functions the same way as a water carbonator or you can use pressurization to infuse the coffee with nitrogen. The purpose of the keg is to make sure that the coffee is maintained under a pressure that is at least 3 bars (4 psi). This ensures that nitrogen is retained in the coffee.
